Colors on table: when it is better to present white on white

When preparing a meal to be served, whether in a restaurant, with the family, or for a home delivery service, color becomes extremely important. The appearance of a dish influences the first impression of the person who will eat it and suggests the overall judgment of the service. Certainly this is something not to be overlooked by restaurateurs, which is precisely why more and more importance is being placed on the way dishes are presented visually.

In particular, with regard to the color of tableware, several studies have shown that identical foods served on plates or containers of different colors are often perceived differently on both a sensory and hedonic level.

The color of tableware for the best presentation

The aesthetics of tableware follow trends and change over the years, particularly in colors, shapes, and styles. It is not just a “plate,” a container for food, but a complement to the perfect presentation of the best meals.

Why choose white for your table

White is the best choice for many chefs: they are perfect items because they fit any style of kitchen and environment. Using white tableware highlights the food presented and its colors, emphasizing its beauty and harmony. A true “blank canvas” to paint a picture that will enchant restaurant customers.

White not only means purity and simplicity, but also timeless elegance and classicism. Just like the Barocco line, in high-quality porcelain, for the most prestigious occasions, with a retro style but modern taste in their refinement. A versatile, ever-fashionable color that will know how to put classy courses in the spotlight. Round or oval plates, oval platters dedicated to the freshest fish, square and oval baskets to surprise with unique creations and underplates for the most delicious desserts.

Not for nothing are white dinnerware the most popular choice for restaurateurs: beauty, classicism and versatility. With a curious fact: round white dishes enhance the taste of sweet food. One of the earliest studies on the psychology of color had already demonstrated this: a tasting of a strawberry mousse on a white plate was tastier and sweeter and of higher quality than the identical one eaten on a black plate.

Earth colors for tableware

Shades reminiscent of earth tones, such as dark green and various shades of brown, bring to mind nature and an awareness of the importance of protecting the environment. Tableware of this color is suitable for environmentally conscious caterers or for themed menus that promote healthy eating

But that’s not all: the Stoneware line is an authentic representation of the power of nature. Warm, familiar colors for materials originating from the earth: porcelain is the expression of environmentalism at the table. Rustic-looking, yet ideal for high-class, high-quality presentations: round, oval and rectangular pans complete a table inspired by nature, for dishes that come straight from a kitchen that knows how to enhance natural ingredients. Plus cake plates, bowls, pots with lids, fondue and 5-compartment plate for a complete line that is perfect for every occasion.

The class of black at the table

Black plates and presentation containers may seem like an unusual choice. Yet, one only has to think of the effect of orange sushi on black plates to assess how it is actually an impactful and striking solution on an aesthetic level and beyond. According to one study, the darker colors of the containers alter people’s perception of portion sizes, giving the impression of larger, more generous servings. In addition, black and angular bases would particularly exalt savory foods.

For an out-of-the-box effect but bringing all the class of black to the table, Ghisa line: a meeting of the strength of ferrous material and the elegance of the finest porcelain, is created to amaze and change the look of your presentations. With a matte, non-delicate finish, baking dishes, pans, trays, plates of all shapes, for sushi and salad bowls line up to step onto the catwalk and amaze your customers. Cups, casseroles, and current finger foods complete a set of tableware that cannot be missing in the most fashionable restaurants.

The psychology of kitchenware colors

Whether you follow trends or simply the style of your restaurant, it is certain that based on the expectation generated by the view, the dining experience will be negative or positive depending on how well this anticipation is satisfied.

The power of color psychology should never be underestimated. Just think about the importance of choosing colors for the walls of a home and how there are specific design philosophies and styles that can influence mood and atmosphere to understand how the same can apply to the color of tableware used to present meals of all kinds, from lunch to dinner, from starred restaurants to more homemade but personally styled ones.

A study has shown that people eat more if there is little color contrast between the food and the container on which it is served. This depends on how the color similarity can cause people to misjudge the amount of food present, a phenomenon known as the Delboeuf illusion. The experiment was carried out by two Cornell University researchers with a buffet serving pasta with Alfredo sauce and pasta with tomato sauce, randomly served on red and white plates. Participants who had Alfredo sauce on a white plate or tomato sauce on a red plate were served 22 percent more pasta than those who had a strong color contrast between the sauce and the dish.

So if it makes sense to serve colorful food, such as green vegetables, on a white container to highlight the dish, it is also true that by putting the focus on the contents, the quantity is also made clearly visible: a useful trick also for not overdoing the portions. So customers will eat more food when there is less contrast between the color of the ingredients and the color of the product on which it is served.

Taste, not just quantity, can also be influenced by the color of the tableware: brighter shades are visually stimulating, and sometimes, while enjoying very tasty foods, these bright colors might “distract” from the taste of the meal.

Food tastes better with the right color

Ultimately, there is no one style of tableware that is completely right or wrong: each color has its advantages when used in the best way, taking care of the details so that it can truly become a setting for the food served.
